In Asia, there are different kinds of 'noodle soup'. This one is a great comfort food on a cold day, but also light and healthy. Quantities are arbitrary - adjust to own taste. Very important to add the shallots as they give the fragrance and flavour. Instead of egg noodles, sometimes I use macaroni. If you are adventurous, eat with chopped hot chilli pepper or add some dried chilli flakes to make the soup spicy.

This is extremely spicy dish and very popular in South East Asia, especially in Singapore, Malaysia and the Phillipines. There are many variations to this traditional dish, and I'll try to be as close to the real thing as I can with my version. Don't worry, you can easily get the ingredients at any Asian supermarket. Serve with white rice and a big smile.

This is an easy way to use up small amounts of leftover chicken, and no one fights over white or dark meat! Just wrap leftover chicken in wonton wrappers and bake until crispy. You can serve them plain or with soy sauce or sweet chilli sauce. You can buy wonton wrappers at Chinese and Asian supermarkets.

There's absolutely no added fat in this Chinese-inspired appetiser. Chicken is poached in a ginger-flavoured stock, shredded and tossed with a soy-vinegar dressing and vegetables, then rolled in lettuce leaves.

Delicious hot and sour soup does not need to be complicated. This is my quick and easy interpretation of the classic Chinese version - ready in about half an hour.
