Chicken, nuts and apricots flavoured with tangy fresh basil make a refreshing summer-style stir-fry. Serve with rice noodles or fluffy white rice for a healthy meal in moments. Delicious!

Rice sticks are flat noodles made from rice flour, available from Oriental food stores. With a lighter texture than wheat-flour noodles, they are perfect for stir-fries. Here, fine asparagus, succulent tiger prawns and crunchy water chestnuts are cooked quickly with the tender noodles.

Chinese noodles are double cooked, first in water until al dente and then in a frying pan until crisp and brown. If you'd like to spice things up, replace the dark sesame oil with chilli oil.

Mooli is the Hindi word for a large crunchy white radish that is used all over South and East Asia - known as daikon in Japan and by various names in China. It's sometimes available in bigger supermarkets, but you can buy it in any Asian supermarket.

This is a simple and popular Chinese New Year dish in Cantonese cuisine. The pronunciation of lettuce in Chinese sounds similar to the pronunciation of "good fortune". Chinese people love to have it on their New Year dinner table.

This is very spicy and full of flavour. I first tried this dish in a Korean restaurant. The red pepper flavour is the same that is used to make kimchi. After playing with the recipe, I discovered a flavour that my Korean boyfriend loves. You can also pour the sauce over lettuce to create a version of the Korean salad some restaurants serve.

This is a very common cold dish eaten all over China and it's very easy to prepare. Depends on your personal taste, you can choose to add more or omit the dried red chillies.

Tofu, red pepper, red onion and chillies, all quickly stir-fried in a sweet and sour sauce. If you like milder dishes, decrease the amount of crushed chillies or omit them altogether.

These are really healthy and not fried. Lovely change for a summer party served with one or both of the dipping sauces. Well worth the effort - these are fantastic.

This recipe makes a huge batch - around 150 wontons. The great thing is you can freeze them. Wonton noodle soup is a traditional Cantonese meal served as a hearty breakfast or lunch. These wontons, made from seasoned pork and prawns, are the actual dumplings served with noodles and chicken stock. 'Dashi' - or fish flakes - is an optional ingredient, but adds wonderful flavour. The wrappers or skins are smaller than spring roll wrappers and can be bought fresh or frozen from Asian shops.
