Chinese noodles are double cooked, first in water until al dente and then in a frying pan until crisp and brown. If you'd like to spice things up, replace the dark sesame oil with chilli oil.

Mooli is the Hindi word for a large crunchy white radish that is used all over South and East Asia - known as daikon in Japan and by various names in China. It's sometimes available in bigger supermarkets, but you can buy it in any Asian supermarket.

Follow this recipe carefully and you will be rewarded with comforting, fluffy and tasty Chinese steamed buns. "Hom Bao" refers to any filled Chinese buns, but if you want to fill these with traditional barbecue pork filling before steaming, follow the recipe for Char Siu Bao, also on this site.

Tofu, red pepper, red onion and chillies, all quickly stir-fried in a sweet and sour sauce. If you like milder dishes, decrease the amount of crushed chillies or omit them altogether.
