This has always been a favourite in our family since I was little. My mum gave me the recipe last year, when I cooked it for the first time. Now it's not just for Christmas anymore! It's fab warm, but also good cold. This can be made in advance and chilled in the fridge

These mini quiches are so quick and easy you could get your little one to help you. They are great for entertaining, for kids' parties and as a snack and also great for school lunch boxes and can be whipped up in no time! If you don't have puff pastry I have made these without and they still come out really good.

This is an impressive nibble or starter. A homemade pizza base is topped with sweet caramelised onions, figs and tangy goat cheese. Experiment with different herbs if desired.

Gravlax is salt-cured salmon popular in Scandinavian cuisine. Some, like this one, are made with vodka.

If you don't have a smoking pan, you can use a thick, deep rosting tin. Then just have a rack where you can put the salmon on. Even with a lid, smoke will come out of it so cover the pan with foil first before putting on the lid. Also, line the base with foil so that the uncooked rice won't stick to the pan and is easier to dispose of. The salmon is wonderful with mango salsa or tartar sauce and the leftovers are good for brekkie with scrambled eggs.

Four entire bulbs of garlic, roasted to make them deliciously sweet, then blended with leeks in a creamy soup. You can stop at the puree stage, and refrigerate for up to one day before adding the cream and lemon juice.
