This was my aunt's recipe for fudge, passed down through the family. It's better than any fudge I've ever had, and easy enough to whip up in 15 minutes or so.

This is a basic truffle recipe to which you can add your own flavourings or extracts. Dust with cocoa powder or icing sugar, or roll in coconut or ground nuts.

I adored black forest gateaux in the 70s and loved trifle so decided I would fuse the two. You can make it all from scratch but also easy to substitute ready made goods if you don't have the inclination. The ingredients are split to enable you to decide at each 'layer'.

This is a rich dessert, but well worth the calories. I serve with a creme anglaise sauce, too.

Chocolate and almonds top off a rich buttery toffee. A simple recipe that you could easily remember and whip up any time. It might be easier if you use a sugar thermometer the first few times to check if the toffee is ready. I always get compliments and requests for more. Use any type of nut that you like in place of the almonds.

My sister made this recently for a Christmas fayre and it sold out in 5 minutes. In all fairness not much made it to the fayre as we ate most of it beforehand. I LOVE this recipe. It's definitely my favourite fudge recipe. It's perfect around Christmas too. Mum makes a big batch every year.

I won a gold medal with this recipe in a culinary Olympics in March of 2007. Serve the souffles with fresh raspberry sauce, if desired.

Bûche de Noël is the French name for a chocolate yule log. This one is a heavenly flourless chocolate cake that's essentially a swiss roll rolled with a luscious chocolate whipped cream. Traditionally, Buche de Noel is decorated with icing sugar to resemble snow on a Yule log.

A chocolate and orange piece of heaven, great with strawberries and cake for dipping! For best results use a chocolate that is at least 70 percent cocoa.

This is a very easy recipe, requiring no sugar thermometer and no sensitive tempering of the chocolate. Make several to give as a homemade food gift or to include in a Christmas hamper.
