This is a traditional paste that originated in the Yucatán region of Mexico. It is used in stews or as a rub for meats. Try it on pork, chicken, fish or seafood for a warm, spicy flavour.

This dish melts in your mouth. The credit goes to my future mother-in-law. Not only does it taste gorgeous, but halibut is a sustainably sourced fish. Each halibut fillet should be approximately an inch thick. Substitute crème fraîche for the double cream for a lighter dish.

A very simple but totally delicious vegetarian dish. Fennel is baked with cream, creme fraiche and Parmesan cheese. It's so simple and if you've never tried fennel before - be prepared to be delighted. This is an ideal accompaniment to many tomato based Italian dishes as the creaminess balances nicely with the tomato.

This is a really easy sauce to serve over ice cream, cheesecake or perhaps even pancakes. Serve it warm over vanilla ice cream or chill it, and serve over plain cheesecake.

This is one of my favourite desserts to make for company in the spring. It’s easy with store-bought sponge cake and it looks like it took hours to prepare with the candied fruit/ricotta filling and green tinted marzipan covering. Some variations use gelato instead of ricotta, but I prefer it best with ricotta.

A spicy sauce made with sweet and sour plums is a wonderful companion for tender duck breasts. Try serving with new potatoes or flat rice noodles and some steamed mangetout.
