This is a dish from the Eastern seaboard of America, where the pork and beans are traditionally simmered slowly in an earthenware casserole. It is the kind of dish that you can prepare ahead and leave to bubble away while you tend to other things. Baked jacket potatoes and crusty bread are perfect for soaking up the delicious sauce.

This recipe is a typical recipe of Southern Italy, precisely the region of Apulia. Spinach and mushrooms are sautéed with onion, garlic, vinegar and white wine. Serve with crusty bread.

I bought a similar spread at the supermarket awhile back, and I thought that I could do it better and cheaper myself. I use tinned artichoke hearts, though you can buy fresh artichokes and cook them yourself.

A wonderful, light salsa recipe given to me by a friend who claims she can't cook! Serve with tortilla crisps, or as an accompaniment to chargrilled chicken.

Simple and delicious steamed artichokes. Serve these with melted butter for dipping. You will need a pot with a steamer insert.

I didn't think I liked asparagus until trying this recipe at a Christmas dinner. Now I cook it for any special occasion and everyone oooh's and aah's when I say it's on the menu.

The special thing about this recipe is that it's so simple. Fresh asparagus with a little olive oil, salt and pepper is cooked quickly over high heat on the barbecue. This is best made with sweet British asparagus that's in season. Enjoy the natural flavour of your veg!

This recipe for asparagus lovers is easy to make but tastes gourmet! I was given this recipe by my stepmother.

Cooked asparagus, diced cucumber and spring onion are folded into long-grain rice and chilled. Toss with mustard vinaigrette when ready to serve. A cool spring or summer salad chock-a-block with green veg.

This recipe is one of many I have developed to utilise the bounty of aubergines my garden has produced this year. The kids will even love aubergines made this way!

This is a wonderful, yet simple, guacamole recipe. Perfect when you need nibbles to serve at the last minute. Serve with tortilla chips.

Looking for a refreshing, sweet and spicy salsa for a warm summer evening? This is our favourite. Serve with tortilla crisps. This is also fantastic served on grilled fish. I often use jarred jalapeno chillies instead of fresh.

This is a recipe I love to make when having a Mexican fiesta. It is basically a dip, but can also be used as a filling for tacos and tortilla wraps.

In this dish, three favourite breakfast ingredients – bacon, mushrooms and tomatoes – are cooked on skewers with new potatoes and patty pan squash. The kebabs are served on toasted ciabatta with a refreshing citrus salad. Enjoy them for brunch at the weekend or as a mid-week supper.

A very simple but totally delicious vegetarian dish. Fennel is baked with cream, creme fraiche and Parmesan cheese. It's so simple and if you've never tried fennel before - be prepared to be delighted. This is an ideal accompaniment to many tomato based Italian dishes as the creaminess balances nicely with the tomato.

Balsamic mushrooms - delicious served on toast for a twist on the old favourite. These mushrooms are equally delicious hot or cold, so you can prepare them the night before your party or moments before!

This is an out of the ordinary side dish that always impresses guests. It's a delicious and refreshing accompaniment to barbecued meats. You can also thread pieces of the marinated pineapple on skewers with chicken or pork for kebabs.
