The sweetness of barbecued vegetables is balanced by a tart tomato sauce, which mixes perfectly with simple couscous. A lovely light summer meal that is sure to get you to your five a day.

This barley risotto is delicious, healthy and filling. It makes a nice side dish for steak or roasted meats, and also works as a starter or light main - especially when you want to serve something a little different.

For this tasty dish, tender lamb fillet is quickly cooked under the grill, then cut up and mixed into a salad of bulghur wheat, red pepper, green olives and fresh mint. No oil is used to dress the salad, just fresh lemon and orange juices, so the fat content is kept healthily low.

I recently craved for cornbread however i couldn't find one here in england! Not even kenny rogers! So i decided to bake one. I found one recipe which i thought was salty and taste of baking soda. It had that burning, metallic taste. Anyway, i found on the internet kenny rogers corn muffin and decided to try it out. It was absolutely scrummy! Exactly what I had when i was child, eating it with roasted meats or fish and veggies! Anyway, here's the recipe of the corn muffin. anyway, enjoy!

Tasty sardines are super-healthy and here they are stuffed with a refreshing, zesty couscous. Ask your fishmonger to bone the fish for you, so they're ready to fill.

This is so yummy and versatile; I came up with it during asparagus season, because I love those M&S salads with Israeli couscous. You can eat this as a salad for lunch, or it could also be a side. This makes 2 hearty lunch sized salads or 4 side dishes.

Quinoa is a high-protein, good for you grain; it can be substituted for couscous and makes a lovely side dish. This recipe is a crunchy, lemony, healthy dish that can be used as a side or as a light meal.

Guinea fowl, in season in autumn and winter, tastes like a cross between chicken and turkey, and is very lean. Here it's roasted with a fig and pistachio couscous stuffing and basted with a spicy lemon marinade to keep the meat deliciously moist. A leafy salad with fresh oranges makes a great side dish.

Cooked and cooled polenta can be cut into shapes and grilled to make an excellent base for a tempting topping. Here the polenta is flavoured with Gruyère cheese, and the topping is a savoury mixture of mushrooms, walnuts and herbs. Serve as a sophisticated starter, with a few mixed salad leaves if you like.

Chunks of lean lamb are gently simmered with dates in a richly spiced gravy, then piled atop couscous and pistachio nuts, and sprinkled with pomegranate seeds. Serve this exotic dish for a special family meal or a make-ahead dish for entertaining, accompanied by some Arabic flat bread and a simple leafy green salad.

Wild boar is a favourite throughout Tuscany and Umbria. Here it is cooked with lots of garlic, herbs and spices to make a wonderful thick sauce (ragù) for polenta. Serve with a rocket and radicchio salad – their slight bitterness is a great foil for the rich polenta and meat sauce – or with lightly braised greens.

Pear, watercress and cucumbers are tossed with quinoa and dressed with diced kumquats, olive oil, coriander and lemon juice. If you can't find kumquats try using clementines.
