An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

This is a recipe from County Mayo. It is traditional Halloween fare but good anytime! Kale can be substituted for cabbage.

Colcannon is a simple, warming Irish potato dish, combining mashed potatoes with shredded cooked cabbage and chopped spring onions. Here it is used as a lovely pie topping for chicken cooked in cider with sliced apples and carrots. The pie is a well-balanced meal in itself, needing no accompaniments.

This has always been a favourite in our family since I was little. My mum gave me the recipe last year, when I cooked it for the first time. Now it's not just for Christmas anymore! It's fab warm, but also good cold. This can be made in advance and chilled in the fridge

Looks similar to colcannon, but champ is native to the North of Ireland. It's made by blending spring onions with creamy mashed potatoes. Great on its own, served steaming hot with extra butter which will melt through it. But it's also the perfect side dish for good quality sausages.

Use the pumpkin houmous from this site to make this amazing pizza. I love to fool around in the kitchen and I came up with this pizza and my parents love it.

This is a beautiful dish to serve as a centrepiece for an autumn dinner party or for Christmas. A whole pumpkin is stuffed with a savoury mixture of venison and wild rice. Minced veal, pork or beef may be substituted.

This is a quick and simple pumpkin stir fry for fall. It is great for a Halloween supper due to its orange colour accented with black sesame seeds. It has a nice, exotic Asian flavour and goes well with steamed white rice.
