Individual baked pumpkins. Great for an autumn dinner party - make one for every guest.

Pumpkin is a versatile and easy-to-cook accompaniment for all sorts of main dishes, as are the other squashes that can be used in this recipe. Club-shaped butternut squash is available for most of the year, and in autumn there are small acorn squash, kabocha squash and Prince Regent squash with its eggshell blue skin.

This is a recipe from County Mayo. It is traditional Halloween fare but good anytime! Kale can be substituted for cabbage.

This is a really simple brownie recipe. it has been tried and tested many a time and they certainly dont last very long in the cupboard. I always use chocolate chunks when i bake them however walnuts are just as good, it is just a family preference. these morish gooey chocolate treats are an all year all occasion must bake.

A modification of the traditional potato and cabbage or kale dish, with chunks of potato and a rich cheesiness that my dad exclaims over. Using milk instead of cream makes it healthier.

This is suitable to make for a crowd or to freeze in smaller amounts for a family meal. Select ripe pumpkin as the colour is important to the visual effect.

A tasty oaty treat with a fruity edge to it. These are great tasting and versatile. You can pick the dried fruit of your choice and they will still taste delicious. for a lemony kick substitute the orange rind for lemon rind and add a tbls of lemon juice. they will keep for upto a week in an airtight container. do not freeze.

Enjoy this spicy pumpkin soup at Halloween. Carve the pumpkin shell into a spooky-looking lantern, and use the scooped-out flesh to make the soup.

This is a quick and simple pumpkin stir fry for fall. It is great for a Halloween supper due to its orange colour accented with black sesame seeds. It has a nice, exotic Asian flavour and goes well with steamed white rice.
