I make this for a Sunday pudding during autumn and winter, and vary the nuts and dried fruits that I use. Serve with custard or over vanilla ice cream.

Colcannon is a simple, warming Irish potato dish, combining mashed potatoes with shredded cooked cabbage and chopped spring onions. This has always been a favourite in our family since I was little. My mum gave me the recipe last year, when I cooked it for the first time. Now it's not just for Christmas anymore! It's fab warm, but also good cold. This can be made in advance and chilled in the fridge

This is really a pretty presentation. I have had many compliments, and it's very easy. Simply hollow out a pumpkin and fill it with your favourite stuffing.

Pumpkin Pie using fresh garden pumpkins. Best served barely warm, with freshly whipped cream on top of each serving. Use the remaining pumpkin puree in any recipe that calls for pumpkin.

As a little boy I grew up helping my mother make apple and other fruit pies. Sadly my mum is no longer with us, but her legendary apple tart lives on. I promise you will really enjoy this!
