Chocolate and almonds top off a rich buttery toffee. A simple recipe that you could easily remember and whip up any time. It might be easier if you use a sugar thermometer the first few times to check if the toffee is ready. I always get compliments and requests for more. Use any type of nut that you like in place of the almonds.

Looks similar to colcannon, but champ is native to the North of Ireland. It's made by blending spring onions with creamy mashed potatoes. Great on its own, served steaming hot with extra butter which will melt through it. But it's also the perfect side dish for good quality sausages.

This stuff is soooooo good! You can either make it from scratch as I have it here, or you can simply add the pumpkin and spices to a shop bought tub of houmous. I have played around with it in different recipes, but it makes such a good dip for either pitta or crisps. It is savoury and warm tasting and I heartily recommend everyone try it!
