This is a heavenly roasted aubergine dip which originates from Lebanon. Delicious served with pitta, vegetables and houmous as part of a meze platter, or - of course - on it's own!

I like to serve these crispy baked courgette chips as a starter with a little fresh lemon juice squeezed over the top. You could also serve with aïoli for dipping.

Potato skins are usually deep-fried, but brushing with a mixture of olive oil and butter and then baking gives just as good a flavour and crisp texture. Here the potato skins are topped with a herby fromage frais, smoked salmon and dill filling, to make a really special and nutritious snack to enjoy with drinks.

Pronounced "Basil Roo-ee", this delicious dish is the perfect summer starter. Basil and tomatoes are seasoned with green chilli, garlic and sea salt. Serve with toasted baguette slices or pitta wedges.

Warm melted brie and sauteed mushrooms are wrapped in a filo triangle. Great for parties! These are time consuming to make, but extremely elegant.

The only tricky part of this recipe is working with filo pastry, but once you get used to it - it's easy. Sometimes you get a batch of filo that rips and tears, so I always buy an extra just in case. I usually freeze these before baking. Just add a few minutes to the cooking time if you are cooking them from frozen. I have also doubled this recipe for large parties.

Bite-sized cherry tomatoes are filled with a mixture of goat cheese and freshly chopped basil. Really quick and easy - perfect for party nibbles or a summer barbecue.

Cooked and cooled polenta can be cut into shapes and grilled to make an excellent base for a tempting topping. Here the polenta is flavoured with Gruyère cheese, and the topping is a savoury mixture of mushrooms, walnuts and herbs. Serve as a sophisticated starter, with a few mixed salad leaves if you like.

I have this on my menu at the moment, I serve it straight from the oven under a Juicy Rib Eye Steak its glorious when the oozing cheese mixes with the juices from the rib eye. Its very popular with my customers and my girlfriend loves it. Why not try it with a big lump of Mature Cashel Blue Cheese melted on the top and a wild mushroom sauce poured over it all. Very heavy and full of fat but great as a treat every now and then.

You can adjust the amounts of various cheese to taste. This is one of the only ways my kids will touch spinach! I love this because it is easy enough to make every day, but posh enough for a nice dinner party nibble.

The perfect vegetarian alternative to a christmas dinner (or any time as it's so good). Would make a fab starter too. The squash and the dressing can be made up to 2 days in advance - keep them covered in the fridge. On the day the dressing just needs to be served at room temp and the squash can be heated in the microwave. Really easy dish to do while dealing with a huge roast!

I got this recipe from a winery at a tasting. It is so delicious on baguette with some wine. For a chunkier consistency, you can fold in additional chopped walnuts at the end. I couldn't stop eating it at the tasting and neither could any of the other tasters!
