This is my favourite Caribbean dish which is very well seasoned (a trademark of Caribbean food) and have always enjoyed it as a child. The sauce should not be as thick as a curry and not too watery if that makes any sense. There are many varieties of this dish and is always best served with rice and peas and West Indian pepper sauce.

I adored black forest gateaux in the 70s and loved trifle so decided I would fuse the two. You can make it all from scratch but also easy to substitute ready made goods if you don't have the inclination. The ingredients are split to enable you to decide at each 'layer'.

A deliciously decadent cheesecake recipe. The cake is layered with crushed Amaretti biscuits, soft cheese, mascarpone, sponge fingers and coffee liqueur.

I've been Diagnosed as allergic to Dairy and Muffins on a sunday morning for breakfast was just too good to give up!! You can Replace the rasberries with other fruits - Blueberries, Strawberries, Apple, Rubarb, Dried Fruits, Banannas even Chocolate Chips.

This has always been a favourite in our family since I was little. My mum gave me the recipe last year, when I cooked it for the first time. Now it's not just for Christmas anymore! It's fab warm, but also good cold. This can be made in advance and chilled in the fridge

This is a really simple brownie recipe. it has been tried and tested many a time and they certainly dont last very long in the cupboard. I always use chocolate chunks when i bake them however walnuts are just as good, it is just a family preference. these morish gooey chocolate treats are an all year all occasion must bake.

I think its very easy, well most of it sure is anyway! The only bit that i really struggled on was the mixing of the ingredients, mixing it into breadcrumbs with your fingers bit i actually found that it was easier with the dough whisks. plus it deduces your mixing time by about 5-8 minutes. from then it gets pretty easy with the rolling and cuttting and everything...!

I know most people buy these nowadays but they are easy to make if you use frozen pastry, plus you can vary the flavour. This recipe uses fresh chives and mustard. Grown-ups love them! For a birthday party, you can keep them plain or add grated Cheddar to the sausagemeat.

These are such fabulous brownies that I'm submitting Slater's method, with a few of my own tips. No nuts, no flavourings, just a 24-carat brownie as dense and fudgy as Glastonbury mud. Whatever else you add is up to you. Serves 12 (or two with the munchies).

A tasty oaty treat with a fruity edge to it. These are great tasting and versatile. You can pick the dried fruit of your choice and they will still taste delicious. for a lemony kick substitute the orange rind for lemon rind and add a tbls of lemon juice. they will keep for upto a week in an airtight container. do not freeze.

The perfect vegetarian alternative to a christmas dinner (or any time as it's so good). Would make a fab starter too. The squash and the dressing can be made up to 2 days in advance - keep them covered in the fridge. On the day the dressing just needs to be served at room temp and the squash can be heated in the microwave. Really easy dish to do while dealing with a huge roast!

A friend has a wee bit of a thing for toblerone and it's been a bit of an on running joke since!! A really tasty cake, Idealy made the day before. Once It's prepared it goes in the fridge and requires no more thinking till your ready to eat it.

Zesty and easy peasy, lovely for hot summer bbq's. Replace fizzy orange in marinade with diet variety for a low-cal slimming option.
