Salmon with a fresh Latin American marinade of orange, lime, tequila and habanero chillies, then served with a habanero-lime butter. Remove the seeds from the chillies to tame the heat.

A simple white wine marinade makes this swordfish special. Rosemary is used in both the marinade and a lemon and olive oil sauce that is drizzled over the fish when served.

For the best flavour, add the dressing to the pasta while still hot, then serve warm. Or, if you have time, prepare the salad ahead to serve cold for a picnic. This colourful salad is a lovely no-fuss meal.

Calzone is a bit like an Italian version of a Cornish pasty, but with the tasty filling sealed inside pizza dough rather than pastry. This recipe combines diced chicken with olives, roasted peppers, fresh basil and mozzarella cheese to make an ideal snack for a packed lunch or picnic.

Popular throughout the Middle East, this thick and chunky Arab omelette is served flat, not rolled or folded, and is more like a cake. It is packed with vegetables and chickpeas, and is equally delicious hot or cold – ideal for a picnic. Serve with a simple tomato and red onion salad, and garlic flat bread.

This has always been a favourite in our family since I was little. My mum gave me the recipe last year, when I cooked it for the first time. Now it's not just for Christmas anymore! It's fab warm, but also good cold. This can be made in advance and chilled in the fridge

I just love Patties and here's a traditional recipe that beats the commercial stuff you buy from most West Indian takeaways or the stuff you buy in packets that gives you next to no amount of meat. This recipe depends on the amount of heat that you like. I personally would add 5 scotch bonnet peppers to my mixture but typically you should add 1 -2 scotch bonnet peppers.

A potato salad with a creamy dressing is always a winner, and the version here, with cucumber, spring onions and fresh herbs, is sure to become a firm favourite with your family. Potatoes are full of goodness, particularly if the skins are left on, so this side salad will make a nutritious addition to any meal.
