These baked Scotch eggs can be enjoyed anytime of the day, and save on fat and calories since they're baked in the oven.

Popular throughout the Middle East, this thick and chunky Arab omelette is served flat, not rolled or folded, and is more like a cake. It is packed with vegetables and chickpeas, and is equally delicious hot or cold – ideal for a picnic. Serve with a simple tomato and red onion salad, and garlic flat bread.

Super-simple and moist muffins with a juicy liquid pear core. If you prefer a sweeter muffin, you can add more sugar, but the fruit in this one keeps things sweet enough as it is. Great way to use up pears that are starting to look a little past their best!

This has always been a favourite in our family since I was little. My mum gave me the recipe last year, when I cooked it for the first time. Now it's not just for Christmas anymore! It's fab warm, but also good cold. This can be made in advance and chilled in the fridge

Mayonnaise and mustard are mixed with mashed egg yolks to fill each half of boiled eggs. Great staple for a buffet table or picnic.

You could use dried dill, but use fresh if you can. Serve in sandwiches or over crisp lettuce as a salad.

This variation on the classic egg mayonnaise uses little quail's eggs with a creamy yet light mayonnaise and yoghurt dressing. It is combined with mixed leaves, cucumber and slivers of succulent smoked salmon. All you need to accompany the dish is some brown or wholemeal bread.

I made these when I had my pub, and they were always a hit. I made them in large batches because of the standing time, but have scaled the recipe for home use.

Similar to scones, these are great for teaching children how to cook and have fun in the kitchen. They look like little rocks but certainly shouldn't taste like them. This makes quite a big batch so you might want to halve the recipe or freeze some of them!

The traditional Scotch egg served with a deliciously simple mustard sauce. Perfect for a light lunch with a green salad.

This is a lemony potato salad with a lighter dressing than the norm. Perfect for picnics.

A home-made quiche, made with crisp shortcrust pastry and a tasty filling, is a sure-fire way to tempt appetites, without breaking the bank.
