The sweetness of barbecued vegetables is balanced by a tart tomato sauce, which mixes perfectly with simple couscous. A lovely light summer meal that is sure to get you to your five a day.

This is great for a party, with interesting textures and flavours combined in one delicious salad. Feel free to use vegetable stock if you want to make this a vegan dish. Leftovers store well refrigerated for several days.

The tartness of lemon juice plus the refreshing fragrance of mint make this a dish that will brighten any meal. Bulghur is a form of cracked wheat that cooks fast and easily.

I recently craved for cornbread however i couldn't find one here in england! Not even kenny rogers! So i decided to bake one. I found one recipe which i thought was salty and taste of baking soda. It had that burning, metallic taste. Anyway, i found on the internet kenny rogers corn muffin and decided to try it out. It was absolutely scrummy! Exactly what I had when i was child, eating it with roasted meats or fish and veggies! Anyway, here's the recipe of the corn muffin. anyway, enjoy!

This is a beautiful cold salad that's refreshing and delicious. Couscous is combined with lemon, cucumber, spring onions, parsley and basil, and served on a bed of cos lettuce.

Couscous makes a brilliant base for a quick salad, as it only needs a brief soaking in hot stock (or water). Here it is combined with chickpeas, dates, oranges and pistachios for a Middle Eastern-style vegetarian dish.

Both children and adults will love these crisp, melt-in-the-mouth American-style cookies. They are a really wholesome treat, lower in fat and sugar than most bought cookies, and packed with oatmeal and raisins for extra nutrients and flavour. It’s worth making a double batch and freezing some – they’ll keep for 2 months and thaw in minutes.

This tabbouleh recipe is different. Instead of using bulgur like traditional tabbouleh, this recipe uses quinoa. It is a grain that is available at health shops. It looks and tastes better than bulgur. My husband and I both love this and neither of us is vegetarian. It's a great meal for a hot summer day. The longer it sits the better it tastes.

This is so easy and is one of my favourite recipes. It tastes even better if you use homemade raspberry jam.

Quinoa is a great change to rice or pasta. I've been trying to think of more dishes using quinoa and came up with this salad.
