This is my favourite Caribbean dish which is very well seasoned (a trademark of Caribbean food) and have always enjoyed it as a child. The sauce should not be as thick as a curry and not too watery if that makes any sense. There are many varieties of this dish and is always best served with rice and peas and West Indian pepper sauce.

Slowly braising whole baby vegetables preserves and enriches their flavours, and reducing the cooking juices in the final stages of cooking creates a delicious dressing that makes an attractive glaze. Using the cooking liquid in this way retains the water-soluble vitamins. These vegetables are perfect with roast poultry, game or meat.

Turkey breast, gently braised to keep it moist and tender, is served with apples and plums for a special Sunday lunch, or a small Christmas dinner. Try serving with new potatoes and green beans.

I think its very easy, well most of it sure is anyway! The only bit that i really struggled on was the mixing of the ingredients, mixing it into breadcrumbs with your fingers bit i actually found that it was easier with the dough whisks. plus it deduces your mixing time by about 5-8 minutes. from then it gets pretty easy with the rolling and cuttting and everything...!

A great British favourite, this version of queen of puddings has a chocolate-flavoured base and is given the modern treatment with more fruit and less sugar and fat. Whenever there is leftover bread, turn it into breadcrumbs, by grating or whizzing in a food processor, then freeze until needed for a dish like this.

Juicy fresh vegetables replace Yorkshire pudding as an accompaniment to the Sunday joint, giving a lighter touch. Try serving with Sweet Roasted Squash with Shallots or Roasted Vegetables with Horseradish Sauce (on this website).

Beetroot was my sworn enemy until I tried it like this; it's a great way to use any root vegetables. I think the beetroot adds a beautiful red colour to the dish, but if it bothers you to serve pinkish vegetables, substitute parsnip, swede or any similar vegetable; be creative!
