This is my favourite Caribbean dish which is very well seasoned (a trademark of Caribbean food) and have always enjoyed it as a child. The sauce should not be as thick as a curry and not too watery if that makes any sense. There are many varieties of this dish and is always best served with rice and peas and West Indian pepper sauce.

This always goes down well with my family. I always make it at Christmastime, but also throughout the year when cooking white meats. It's also welcomed by my vegetarian family/friends.

A rack of lamb is seared, and covered with a mix of breadcrumbs, Dijon mustard, garlic and rosemary before roasting. Try the same technique with beef or pork.

This is a really simple brownie recipe. it has been tried and tested many a time and they certainly dont last very long in the cupboard. I always use chocolate chunks when i bake them however walnuts are just as good, it is just a family preference. these morish gooey chocolate treats are an all year all occasion must bake.

This is an easy leg of lamb recipe that has been in my family for years. You also get a rich tomato-rosemary gravy. Roast until the internal temperature of the meat is at least 70 C.

I think its very easy, well most of it sure is anyway! The only bit that i really struggled on was the mixing of the ingredients, mixing it into breadcrumbs with your fingers bit i actually found that it was easier with the dough whisks. plus it deduces your mixing time by about 5-8 minutes. from then it gets pretty easy with the rolling and cuttting and everything...!

In Greece, roast meat (lamb, beef, chicken) and potatoes is ubiquitous throughout the year. Upon my most recent visit to Athens, my aunt let me in on a secret that takes this traditional dish to another level. Instead of the usual lemon juice, she said, add the juice of one orange. I tried this upon my return home and it is absolutely delicious! It may be awhile before I go back to lemons -- and this dish is as delicious as it is simple.

This is simply gorgeous because it's so comforting! Preparation is easy, too! The lamb shanks are slow-cooked in a generous amount of red wine. This is best served with the sauce juices poured over mashed potatoes, sweet potatoes, risotto or even soft polenta.

This leg of lamb is marinated overnight with fresh rosemary, garlic, mustard, honey and lemon zest. Be prepared for lots of requests for seconds!

Lamb and flageolet beans are often served together in French country cooking because they complement each other so well. In this recipe the flageolets are mixed with potatoes and green beans, and the dish is deliciously flavoured with lemon, garlic and rosemary. Serve in true French style, with a crusty baguette. The roasting time is based on the weight of the joint; 20 minutes per 450g (1 lb) for rare, 25 minutes per 450g for medium well or 30 minutes per 450g for well done.

I like to cook potatoes in the tin around the roast and make a gravy using the juices. The only other thing you need is some fresh veg for a fantastic Sunday lunch with the minimum of fuss.

Potatoes are roasted until crispy and brown with real meat flavour. These roasties are to be made with the fat and juices that come from roasting a joint of lamb. These make a fantastic addition to a proper Sunday lunch.

This recipe was shown to me whilst I worked in an area of Germany called the Kaisersthul, a volcanic outcrop in the Black forrest (Schwartzwald) region. It is so rich and delicious - you just will not beleive it! It takes a little time, but its worth it.

I prefer to make a shortbread base rather than use digestive biscuits - it tastes a little richer. But the choice is yours. Either way, this is a great dessert for a crowd.
