Once they have been put together you can either fry them or steam them; both ways are delicious.

Prawns cooked in butter, garlic, lemon juice and parsley are even better with the help of Dijon mustard. Serve with fresh crusty bread.

This is a great little starter. Ideal for a romantic meal for two!

Cooked and cooled polenta can be cut into shapes and grilled to make an excellent base for a tempting topping. Here the polenta is flavoured with Gruyère cheese, and the topping is a savoury mixture of mushrooms, walnuts and herbs. Serve as a sophisticated starter, with a few mixed salad leaves if you like.

The original recipe of his American shellfish classic was created in New Orleans. This is my version. Freshly cooked oysters are topped with a spinach, bacon, breadcrumbs and Pernod, then placed on a bed of coarse salt and lightly grilled before serving immediately. These are very impressive!

Prawns and scallops in a ginger butter sauce with shredded carrot and leeks. Delicious served with plain basmati rice.

A very impressive and delicious recipe for how simple it is! Just crush the garlic with the side of a chef's knife blade instead of chopping it, and keep the sprigs of rosemary whole - this allows them to be easily removed before serving.
