This soup is native to Nigeria and many of my British as well as Nigerian friends have enjoyed it. It is a great soup for those who like to try something different every once in a while. Ground egusi seeds give this soup a unique colour and flavour. If you can't find egusi seeds, you can substitute pumpkin seeds. Any combination of crab, prawns and smoked fish can be used in place of the prawns.

This curry from Mozambique can be made with chicken or prawns. Goes well with tomato or spicy onion chutney.

Sea bass makes an impressive meal, and its delicious flesh is moist, tender and sweet. Here it's stuffed with an exotic Moroccan-style fresh herb and spice mixture called chermoula, then braised on a bed of vegetables.

Moroccan ras-el-hanout spice mix is a terrific flavouring for rapidly seared tuna accompanied by a sweet-sour bean salad. Serve with flatbreads and a watercress and rocket salad tossed with fresh coriander. Delicious!

These little savoury pasties are traditionally deep-fried, but this healthier version is baked to keep the fat content low. They make a great lunch or picnic dish, served with a tomato salsa or minty yoghurt and a crisp vegetable salad.

Versions of this fresh-tasting, crunchy vegetable and bread salad are popular throughout the Middle East, where it is often served as an accompaniment to roast lamb. Here, it is transformed into a filling meal with grilled, fresh tuna steaks, which have a tender, meat-like texture.

These dainty pastry parcels are traditionally made with a special pastry called malsouka and deep-fried, but baked filo pastry gives very good results and is much lower in fat. With a tomato and cucumber salad, and some fruit chutney alongside, they make a really delicious lunch.
