Apple purée and cinnamon add a sweet and moist variation to the classic batter of milk, eggs and sugar. An unusual but delicious idea for kid's brunch or Christmas morning, especially if you substitute brioche for the bread.

Created in the 1920s at Delmonico's restaurant in New York City, this dish traditionally uses ham or bacon and a rich butter sauce. Here, a lower-fat yogurt and chive hollandaise contrasts with the richness of poached eggs and lean Parma ham, to make a lighter, but equally special version.

These pancakes are thick, like a drop scone, and wonderfully light and fluffy. They can be left plain, but adding fruit, such as sliced banana, makes them infinitely more exciting, and more nutritious too. Here they are served with cinnamon-spiced yoghurt and a drizzle of honey. Serve straight from the pan, to enjoy at their best.

You can use any flavour of jam to make this recipe. . . raspberry, strawberry, blackcurrant or even lemon curd. These are so easy to make when you use a bread machine. If you don't have a bread machine - see footnotes for directions. Serve them plain, sugar coated or iced.

This has been the pancake recipe for my family since I was able to eat them. I don't know where my mother got this recipe but it's the best I've ever had. They rise up nice and high. I sometimes add vanilla and spices like cinnamon and nutmeg. Very tasty!!

This is a classic fried pastry, with versions popular in Chile, Argentina and the US. This recipe is similar to the ones you find in New Mexico. Roll in a mixture of cinnamon and caster sugar immediately after frying, or try drizzling with honey.
