Simply mix rhubarb, berries, sugar and flour together, then spoon the mixture into an unbaked pastry case, dot it with butter, add cover the top with shortcrust pastry. The fruit mixture can also be frozen and used at a later date.

Being steamed rather than baked, this mixed-grain bread has a soft crust and close texture. It gets its dark, rich colour and flavour from molasses. It was created by American settlers in the days before most homes had ovens.

These muffins are extra large and very delicious. I usually double the recipe and fill the muffin tin to the very top to get huge coffee shop sized muffins. Add extra blueberries too, if you want!
