Fruity buttermilk pancakes

These pancakes are thick, like a drop scone, and wonderfully light and fluffy. They can be left plain, but adding fruit, such as sliced banana, makes them infinitely more exciting, and more nutritious too. Here they are served with cinnamon-spiced yoghurt and a drizzle of honey. Serve straight from the pan, to enjoy at their best.

This polenta pancake has its roots in Native American cuisine, and has been called loads of names over the years - hoecakes, Shawnee cakes and ashcakes, just to name a few. Serve hot with honey and butter for a unique breakfast treat.

This has been the pancake recipe for my family since I was able to eat them. I don't know where my mother got this recipe but it's the best I've ever had. They rise up nice and high. I sometimes add vanilla and spices like cinnamon and nutmeg. Very tasty!!
