Australia's famous Lamingtons are squares of sponge cake that are first dipped in chocolate glaze and then in coconut. This biscuit version's inside is denser and loaded with toasted almonds.

Lamingtons are little sponge cakes coated in chocolate and coconut. A traditional Australian treat that appeals to most. Any firm type of plain sponge cake works well.

Being an Australian I love nothing more than a great pavlova. This is a very easy - tasty pavlova! Great to whip up for guests on short notice! :)

This is my Aunty Jan's recipe for a delicious Christmas plum pudding, it is so good that she gets orders from other people! It is a lovely winter dessert, great with custard, cream or ice cream (or all of the above!) and full of festive spirit! It is however, a lengthy process - but is worth it!
