A traditional addition to your Christmas table, this luscious sauce fits any budget. Add more or less cloves and peppercorns to taste.

This always goes down well with my family. I always make it at Christmastime, but also throughout the year when cooking white meats. It's also welcomed by my vegetarian family/friends.

This custard is excellent with sponge pudding or with our favourite croissant bread pudding. It's pourable or spoon-able. To prevent a lumpy or scorched pudding use a heavy bottomed saucepan and stir CONSTANTLY. Do not walk away while this is cooking.

Mint has a sweetness of its own, but a little sugar would be okay if you prefer extra sweetness - no more than 1/2 teaspoon. Cider or malt vinegar can be used for the vinegar. A traditional pairing with lamb.

A really, truly gorgeous dried fruit salad that I serve in the evenings to share with my mum and sisters over a good movie. I use organic pine nuts, and rain forest honey... of course, you don't have to, but sometimes these little touches help, I think. Add the pine nuts however much or little you like 'em, about 2 ounces is good for me. I serve this in glasses, to show off the fruit, with plain yoghurt and a sprinkling of demerara sugar.
