This country-style gratin tops nutty-flavoured root vegetables with a crisp mixture of wholemeal bread cubes and Cheshire cheese. It makes a really satisfying main dish on a chilly day. Serve in the baking dish, straight from the oven, with a leafy green vegetable or mixed salad alongside.

Perfect alongside roast beef and gravy. Yorkshire comfort food with the added flavour of fresh parsley and sage. Actually, you can use any herbs you like! Rosemary and thyme work well, too.

When my mum became a coeliac the one thing she missed was stuffing! For 2 years we have been trying to find some, first bought it in Sainsbury's and that was good until they stopped the product so we have been experimenting ever since and now we have cracked it! The flavour and texture were an almost perfect match to Paxo's.

Frozen peas retain their nutrients much more than tinned, and they taste fresh and delicious. You can add more liquid (water or cream) depending how mushy you want your peas. Use semi-skimmed milk if you're watching your calories.

These pickled chillies are great in salads, sandwiches and wraps, or to serve alongside a meat dish. These can be made less spicy by removing the seeds from the chillies.

When making a layered gratin such as this it's important to think about how the vegetables will cook, how much moisture they will release and whether or not they will hold their shape after cooking. A mixture of roots and softer vegetables yields a well-textured result and provides a good mix of nutrients.
