Flapjacks are a favourite sweet treat for lunchboxes as well as for coffee or teatime. The modern streamlined version here uses less butter than usual, and adds dates for natural sweetness as well as walnuts and sunflower seeds for extra texture. The result is both nutritious and delicious.

This has been a favourite of my husband's since as long as I can remember. His mum always manages to bake him one every year (she's 75) for Christmas - though she always claims it's his last.

At the age of 57, I am ashamed to say I have never before made a Carrot Cake, the last cake I baked was over 30 years ago for my Step-Grandfather for his 70th Birthday). For some weeks now, I have been promising my Fiance John that I would bake him a carrot cake and finally today I have done it. I used some old recipe books that belonged to my late Mum Barbara and took a few hints from other suggestions and went with the flow.

I found this recipe in magazine ages ago and have been using it fairly frequently since. You can shape the pasties into a man in the moon shape or alternatively cut a circle to make a pasty shape. Absolutely delicious and very moreish especially eaten outside with a glass of mulled wine.

Most rich fruit cakes are high in fat and added sugar, but this one is an exception. It's relatively low in fat, and depends mainly on dried fruits soaked in apple juice for natural sweetness. Decorated with nuts, and glacé and crystallised fruits, it makes a healthy cake that would be festive enough for Christmas.
