This is my favourite Caribbean dish which is very well seasoned (a trademark of Caribbean food) and have always enjoyed it as a child. The sauce should not be as thick as a curry and not too watery if that makes any sense. There are many varieties of this dish and is always best served with rice and peas and West Indian pepper sauce.

I just love Patties and here's a traditional recipe that beats the commercial stuff you buy from most West Indian takeaways or the stuff you buy in packets that gives you next to no amount of meat. This recipe depends on the amount of heat that you like. I personally would add 5 scotch bonnet peppers to my mixture but typically you should add 1 -2 scotch bonnet peppers.

This is my version of curried potatoes, green beans and prawns. It's yummy! This recipe is versatile in that if you want to make it vegetarian just leave out the prawns! Use a Trinidadian brand of curry powder if available. Serve this over steamed basmati rice or with naan.
