This is my favourite Caribbean dish which is very well seasoned (a trademark of Caribbean food) and have always enjoyed it as a child. The sauce should not be as thick as a curry and not too watery if that makes any sense. There are many varieties of this dish and is always best served with rice and peas and West Indian pepper sauce.

This drink is a real treat on hot days! Its blend of fresh bananas, pineapple juice, coconut and rum is fantastic! The bananas in this recipe need to be frozen before use. You may want to vary the amount of rum according to your taste.

Everyone seems to love this easy but unusual blend of fresh mango and garlic. The salsa can be used on fish as well! Be sure your mangos are ripe for best flavour.

A nice, refreshing tart and sweet salad made with mango, papaya and avocado that is excellent for any time of year. This will turn any meal into a special occasion. Perfect for tropical themed BBQs and parties!

Pelau is a stew from Trinidad made with either beef or chicken. The unique flavour comes from searing the meat in caramelised sugar then simmering with rice, coconut milk and peas. Serve accompanied with slices of tomato, avocadoes or cucumber.
