In China soups are not served at the beginning of the meal but in between courses or dishes. This is why they are made with a light stock, so they are more appropriate as a starter in a Western meal. You can part-prepare this soup ahead, then add the scallops, vegetables and noodles just before serving.

With its typical Chinese flavours – ginger, sesame, soy sauce and rice vinegar – this salad makes a delectable lunch or supper dish. It is very nutritious as most of the vegetables are raw. For the best effect, cut the pepper, carrot and spring onions about the same thickness as the noodles.

Here, strips of duck are stir-fried in the Chinese fashion, with onions, water chestnuts, pak choy, bean sprouts and – a sweet touch – fresh pear. Very little oil is needed for a stir-fry, and adding lots of vegetables keeps the quantity of meat down. Serve with rice noodles or with plain boiled or steamed rice.

Sweet and sour sauce doesn't have to be thick, gloopy and bright orange. This modern, light version allows the succulence of the meat and the fresh flavours and different textures of a colourful variety of vegetables and noodles to shine through. Some plainly cooked rice is all that is needed to complete the meal.
