This recipe is the next best thing to a bakery babka! Although babkas are traditionally yeast-risen breads, this one is more similar to a sweet quick bread or cake.

The word 'dobos' means 'like a drum' in Hungarian. However, this cake is named after its creator, Austrian pastry chef Josef Dobos.

This cake was traditionally a birthday cake in my friend's home. Her mother is from Hungary and only has this recipe in her head! Now it will be preserved . . . Note: hazelnuts may be toasted or un-toasted. The skins may be removed or left on.

Summer is the time when we can forget about tinned fruit and preserves, and can finally enjoy the full, rich flavour of fresh fruits. This is a great fruity, juicy sponge cake made from lots of real apricots with a gentle hint of honey. Fabulous for sweetening up mid-summer tea time!

I found a similar recipe on the Polish internet around 5 years ago and I changed it and tweaked it a lot since then. I think I made it at least 20 times. It's very sweet, full of different surprises (seeds, nuts etc.) and everybody loves it. It's also quite filling so it might even last for 3 days - that's if there are no children around! There is a lot of writing but the cake is very quick to make.

This is a wonderfully simple, yet delicious cake! It is so moist and fresh, it will surely be a favourite with your family, just like it is with mine! The main length of the preparation time is cutting and peeling the apples. A mixture of apples works great, although I usually use Golden Delicious.

This cake is very light, tender and tasty. It's fun to make and fun to eat. Two layers of soured cream poppy seed cake, with a luscious lemon filling. Ice with a buttercream icing if desired.
