I made this up one day. It takes a lot of work, but makes a lot of stew, and the leftovers just taste better and better each time you try it.

This recipe was given to me by my sister, who got it from a Hungarian lady in 1961.

Quick and easy to cook, this version has half the fat of the much-loved traditional recipe. Try serving with mixed wild and plain rice.

Chicken is pan fried in butter and paprika and served with sautéed mushrooms and onions. Delicious Hungarian comfort food.

Stroganoff is a wonderful last-minute dish for guests; it is rich and creamy, but is simply and quickly prepared. Traditionally it is served with a rice pilaf, but is equally good over egg noodles.

Pretty much a classic recipe, with some added extras. It can be adapted so easily, and you can add almost whatever you have left in the cupboard. You can serve with normal bread, mashed potato, or my favourite, garlic bread.

I made friends with a girl from Ukraine and after helping her find a flat and a job, she wanted to pay me back. I said no but suggested we cook a meal together. This is what we made, it was a great success and now we talk about recipes all the time.

This short-cut version of classic Hungarian goulash is rich and delicious. Strips of lean pork, shredded red cabbage and green pepper cook quickly and taste excellent with the traditional flavourings of paprika and caraway seeds. Serve rice or noodles and a simple green salad alongside, to complete the meal.

This classic dish is warming and delicious. My mum made this when we were children, and we loved it. Can be made with cheaper cuts of beef, and comes out very tender. If it gets too thick, add a little water while it's cooking. Garnish with crème fraîche or soured cream.

Minced turkey and mushrooms make succulent meatballs – delicious simmered in a sauce of smooth passata with red and green peppers. Paprika warms the dish and new potatoes turn it into a complete one-pot meal.

I learned this from my Bulgarian mother in law though it's probably Turkish in origin. The recipe calls for 'chubritsa', a Bulgarian herb that can be difficult to find, so basil can be substituted in its place.

These Polish dumplings feature traditional potato and sauerkraut fillings; they're a perfect way to use leftover mash. Hearty winter fare!

Pork chops, mushrooms and onions in a creamy soured cream sauce. A richly satisfying, yet simple, midweek supper.

A traditional fish dish from Russia, this is made with poached salmon, rice and mushrooms. The updated version here uses crisp filo rather than the usual puff pastry. As all the preparation can be done ahead of time, a koulibiac is an ideal dinner party dish. All it needs with it are some colourful steamed vegetables.

This can be made with pork strips as well.

This is a dish that my aunt gave me. It takes awhile to make, but it is worth it. Hope you like it. Serve over spaetzle or rice.

This is a very rich and flavourful slow cooker stew with a thick, red, smoky tasting sauce. Great for making a day ahead and reheating. Instead of pasta, you can serve over rice or potatoes.

These are pierogis filled with cottage cheese, boiled and usually eaten with a sour cream sauce and crispy bacon. This is an old family recipe, from relatives who were Russian Poles.
