This delicious galette, made with brown rice, crunchy stir-fried vegetables, chestnuts, fresh sage and cheese, is a cross between a roasted rice cake and a risotto. Serve with a simple salad and cranberry sauce.

Fresh and fruity, this casserole comes from northwestern France, where cider apples grow in profusion. A dish of rice is cooked in the oven at the same time, making this a very simple meal to prepare. Serve with generous helpings of green vegetables, such as French beans or mange-tout.

My mother used to make this all the time, usually to go with Sunday dinner. I was hooked. Haven't had it in ages and I was wanting to bake something special for a special someone so I asked mum for the recipe. Tried it out today, and it's just as I remember. The thing that makes it for me is the frangipane. Hope you like it as much as me.
