This is the most popular of Greek soups. The name literally means 'egg and lemon', the two most important ingredients that produce this light and nourishing soup. Usually made with homemade chicken or fish stock, garnish this quick and easy version with fresh lemon slices.

This is a Greek recipe for prawn saganaki which is great as a starter or meze. It is a delicious dish that I'd only tried in restaurants, but when I tried to make it at home I found that I can make it just as well. Serve with nice crusty bread to mop up all the gorgeous sauce.

Fakes (pronounced 'Fah-kehs') is a staple in the Greek kitchen, and an especially filling and healthy meal. It is traditionally served with a drizzle of olive oil and lots of vinegar. Though the vinegar is of course optional, try it - it lifts the lentils and adds another dimension of flavour!

Peas are normally considered a side dish, but in Greece it is common to eat a plate full of vegetables as a main. This traditional way of cooking peas is so satisfying yet healthy - not to mention easy - it will most certainly become a favourite. Serve with crusty bread and feta for the ultimate meal!

For a fabulously flavourful dish that takes just minutes to make, simply sauté garlic, onion and tender strips of chicken. Add artichoke hearts, tomato, feta cheese, parsley, lemon juice and oregano, and toss with hot pasta.

This is a sweet lemony syrup for pouring over cakes, which is typical of Greek cuisine. You can also use this as an alternative to maple syrup on pancakes, or to drizzle over ice cream. It's very sweet so a little goes a long way!
