In the North of Ireland, locals treat themselves to this enormous breakfast on the weekends. The fried breads make it unique. Soda bread and potato farls are cooked in reserved bacon fat making them golden and crispy. Served alongside Irish bacon, sausage, black pudding, tomato and egg - you won't need to eat again for the rest of the day!

Potato bread farls are fried in a little olive oil to make one of the essential components of an Ulster fry-up! They taste great on their own with a little salt, or with a fried egg on top.

You could face anything after this hearty breakfast of eggs, mushrooms and tomatoes fried with bacon and butter. Slices of Irish soda bread are pan fried and served on the side.

For me, the best pancakes to have on Shrove Tuesday are the traditional ones. Served warm, straight from the pan and sprinkled with caster sugar and plenty of fresh lemon juice - nothing beats it! They'll be lining up for these!

These potato cakes are not sweet cakes, they are however an excellent way to use up leftover mashed potatoes! Serve hot with a little butter with fried eggs, baked beans, or even with a nice steak!

The word "farl" is Gaelic for four parts. Make these with leftover mashed potatoes and serve hot with a little butter and salt, or fry them alongside soda bread as part of an Ulster Fry-up!

Served fresh from the oven while still slightly warm, scones are a traditional favourite, whether for tea-time, lunch or a quick snack. Here, mashed potato is added to the mixture, which makes these savoury scones wonderfully moist and improves their keeping qualities. It’s a great way of using up leftover potato.
