Baileys and chocolate add a delightfully rich flavour to a classic cheesecake recipe. This makes a delicious ending to any special meal.

I first made this in my A-level Home Economics class - sometimes I get a craving to make it again. Usually in the summer! It's a very smooth solid dessert. I like to make it in individual ramekins and serve with fresh raspberries and cream. I buy the seaweed in a health shop in Donegal.

Champ is an Irish dish of mashed potatoes and leeks, and here the tomato dressing adds colour as well as vitamins. Potatoes, in this dish unpeeled, contain their best source of fibre and nutrients in and just under the skin.

Looks similar to colcannon, but champ is native to the North of Ireland. It's made by blending spring onions with creamy mashed potatoes. Great on its own, served steaming hot with extra butter which will melt through it. But it's also the perfect side dish for good quality sausages.

This is better than the shop bought Irish cream liqueurs and is very popular with family and friends. Will store for several weeks in fridge, just serve over ice.

This is more commonly known as "fruit soda". Serve sliced, buttered and with strong tea! You can also make this recipe into scones or farls.

This soda bread uses more plain flour than wholemeal to give it a lighter colour and softer texture. I add sunflower seeds and use a course wholemeal to give it a little bite.

Mmmmm . . . imagine warm sticky toffee puddings served with a dollop of Baileys Extra Thick Cream with a hint of Crème Caramel! The perfect midweek treat. Yummy.

A modification of the traditional potato and cabbage or kale dish, with chunks of potato and a rich cheesiness that my dad exclaims over. Using milk instead of cream makes it healthier.
