A feast of colourful vegetables makes a superb topping for a pizza-style ciabatta. The bread soaks up the aromatic roasting juices so that it is deliciously moist with a crunchy crust. If you want to boost your vegetable intake even more, serve it with a leafy herb salad.

This recipe comes from my Italian grandmother. It was always one of my favourites. It's best if you chill it overnight.

When I was living in Italy, I ate this as much as possible. It's so easy and so delicious. Perfect as a starter for entertaining or a simple lunch. Have some ciabatta bread and olive oil on the side for dipping.

Many cuisines have long traditions of combining fruit with cheese. This recipe stems from the Tuscan combination of juicy pears with salty ewe's milk called pecorino. With some of the cheese melted over the pears and the rest combined with cool grapes and salad leaves, this makes a stylish first course, or light main dish for two.

Home-made mini pizzas topped with a rich tomato, chilli, olive, caper and artichoke mixture will spoil you for anything less. Some crumbled Gorgonzola cheese melted over the top makes a change from the usual mozzarella, and gives these pizzinis a fabulous flavour. Serve with a mixed leaf salad for a delightful lunch or snack.

There's nothing better than pasta tossed with home-made pesto. Almonds are just as good as traditional pine nuts, but much less expensive.
