Bite-size balls of fresh mozzarella, known as bocconcini, make up this scrumptous salad. If possible, seek out mozzarella di bufala, made from water buffalo's milk, a specialty of central and southern Italy. It is a softer, creamier mozzarella than that made from cow's milk.

An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

This is my version of a delectable pud I had in Milan. You could chill this before serving, but I like it warm. The rum at the end is optional, but makes for a nice presentation at a dinner party.

A traditional, easy and delicious Italian pud. I had a difficult time finding a good and easy recipe on the internet, so I made up my own recipe. It tastes just like the panna cotta served in Italy. This keeps well for several days in the refrigerator.

Yummiest dessert ever! And very easy to make. This is my family's favourite. One serving is not enough! Believe me! Don't substitute the mascarpone with double cream. There is no tiramisu without mascarpone. And use the best quality coffee.

A delicious cream sauce for a special occasion. I simply toss it with pasta. Toasted hazelnuts, walnuts or pine nuts are a nice addition sprinkled on top.

This recipe is great but I cheat using a ready made flan base, but you can use Sponge fingers instead. However the flan base looks better for presentation and saves time.

These are beautiful little desserts perfect to serve for company. A ready-made Madeira cake makes it simple and the cream/nut mixture in the middle is absolutely delicious.

This delectable version of the popular Italian dessert includes the traditional sponge biscuits soaked in coffee and liqueur for the base, but rather than a rich topping there is a light and creamy mixture of sweetened ricotta cheese and Greek-style yogurt. A sprinkling of grated dark chocolate is the finishing touch.

You'll need 4 large bowls, an electric mixer and a triffle bowl (or a 5in deep 8 x 12in glass dish). If you do not have an electric mixer, the prep time is slightly longer as you will have to beat everything by hand. TIP: If you can't find ladyfingers, you can use plain Rich Shorties Biscuits or any plain biscuit TIP: You can add the inside of one vanilla pod or 1 tps vanilla extract to the custard mixture and freeze to make a creamy ice cream.

This is such an easy, but beautiful dessert to serve for company in the summer when fresh berries are in season. Gelatine leaves work better, but powdered gelatine is easier to find generally.

The traditional recipe for this ‘cooked cream’, from the Piedmont region of Italy, is made with rich double cream. This lighter version, served with a pretty rhubarb and strawberry compote, is delightfully smooth and creamy yet much lower in fat. Prepare it the day before serving, if possible.
