My first recipe here :) I threw this together a couple of days ago, as I found some beautiful fresh Fennel and some stunning fresh chicken legs. The idea was to mix my mothers stunning recipe for Spanish garlic chicken with the fresh fennel and give that a little Italian twist.
I was making some cheeseburgers for a barbeque and I thought that the mixture I was using with some paprika would make some lovely meatballs, so I fashioned a simple tomato sauce to go with them. It's a blend of Spanish and Italian flavours. They are extremely tasty and easy to make and my 2 1/2 year old absolutely adores them, so I thought that I would share the recipe with you.
Spanish and Italian inspired pasta dish with tomato, chorizo, white wine and a hint of chilli. Garnished with fresh toasted breadcrumbs, parsley and lemon zest.

This is an easy fried sandwich which is lovely alongside a Spanish tapas plate or Italian antipasti. It's quite rich, so one per person is ample.
This is a quick, garlicky Mediterranean olive spread. Similar to the French tapenade, but without capers. Excellent served with good crusty bread.
A light tomato based fish stew with local, fresh ingredients. Simple and easy to make but tastes great.
