My mother-in-law took great pains to prepare Gefilte Fish for Passover and Rosh Hashanah. The best legacy she left was to teach her sons how to do it and in turn they would teach their wives and then the next generation. This has been passed down and today it is still appreciated as the Mintz Family Gefilte Fish.

My mother makes a GREAT beef brisket. She got the recipe after watching a friend's Jewish grandmother make it. It is perfect, delicious and easily kosher for Passover. Enjoy! Great with mashed potatoes or potato latkes (latkes with this meal are also kosher) or roasted vegetables (with olive oil, salt and pepper - also kosher).

This Passover tradition is one of my favourite soups, good year round. I always double the recipe for the matzoh balls, since everyone enjoys them so much. You may wish to cook the matzoh balls in slightly salted water, allow them to cool for several minutes and then transfer them to the soup. Some people say that the matzoh balls make the broth a bit cloudy.

For a special Passover main, make a savoury mixture of shredded courgette, matzo farfel, eggs, onion and garlic. Stuff it under the skin of chicken breasts before roasting.

This is a delicious combination of red peppers, tomato sauce and minced chicken layered with matzah. Seasoned with plenty of fresh basil it is a tasty treat. In addition, for those who have nut allergies this is nut free!

Be sure and remove the coating before slicing this beef roast. You will be amazed at the juiciness and incredible flavour of the meat.

I have yet another great creation for your seder table. Turkey is not only economical but this recipe is easy to prepare and above all straight forward to serve. It will keep well on the hot plate so if you spend more time than expected discussing the delights of the Haggadah story, it will not spoil.
