This American-style hot sauce is inspired by what one finds on the table in the country's many Mexican and Tex-Mex restaurants, and gives just about anything the right amount of spice. You can use this as a table sauce, and spices can be adjusted to taste. Try it on burgers, tacos, barbecued meats and vegetables - the possibilities are endless!

This is a delicious and aromatic Argentinean marinade or sauce. Use it on barbecued meats - it's especially good with steak. The sauce is best if used immediately but will keep in the refrigerator for a couple of days.

Make your own hot pepper sauce! This is a tremendous table sauce that will spice up cold meats, marinades, vegetable dishes - just about anything! Jalapeños are blended smooth with oil, salt and pepper. Keep refrigerated.

Fresh ripe tomatoes, chillies, onion, garlic and coriander with a splash of lime juice - all you need to make a delightfully refreshing salsa. Adjust the heat level by experimenting with the amount and type of chillies you use. Jalapeños will give the most heat! Use jarred if you can't find them fresh.

Sofrito in Spanish simply refers to any well cooked sauce. In Puerto Rico it is something like a mirepoix that is used as the base for many dishes, such as soups and stews. Use this to breathe new life into your everyday dishes, or simply add to rice for a delicious pilaf.
