An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

Fresh ripe tomatoes, chillies, onion, garlic and coriander with a splash of lime juice - all you need to make a delightfully refreshing salsa. Adjust the heat level by experimenting with the amount and type of chillies you use. Jalapeños will give the most heat! Use jarred if you can't find them fresh.

Plantains can only be eaten cooked. Fried plantains are a traditional treat in Latin America and many other parts of the world. Overly ripe plantains work best for this recipe. If you want a savoury experience, serve these with salt. If you want something sweet, serve with sugar and cinnamon.
