This is a milk-based sauce popular throughout Latin America. Milk sweetened with vanilla and sugar is cooked to make a wonderful, versatile caramel-like cream. You can eat it alone, use it to fill cakes, or serve over bananas, ice cream or any other pud!

Make your own hot pepper sauce! This is a tremendous table sauce that will spice up cold meats, marinades, vegetable dishes - just about anything! Jalapeños are blended smooth with oil, salt and pepper. Keep refrigerated.

OK, it's not entirely authentic but it's a good version to make with store-cupboard ingredients. Serve with cooked chicken, rice or tortillas, salad greens, sliced avocado and chopped tomatoes round out this fresh tasting meal.

This is a nicely spiced enchilada sauce - pour over corn tortillas stuffed with cheese and your choice of shredded beef or chicken, or refried beans.

Margaritas sure to please the margarita fanatic; as with anything, fresh ingredients are the key to a quality result.

When I lived in Mexico this was one of my favourite dishes. Toasted sesame seeds and blanched almonds are puréed and cooked with chillies, olives and capers.

A tamale is a Mexican and Native American dish consisting of a soft cornmeal (masa) dough filled with meat, cheese or vegetables, then steamed. This recipe is for a flavourful pork filling. If you are making your own tamale dough, you may want to reserve 250ml of the stock before draining - it makes delicious tamales. You can always use this pork filling for tacos, burritos or enchiladas, as well.

I sometimes add veg and some precooked chicken or sausage for a main meal, but it can be a side dish also. It goes nicely with BBQ/Grilled food, espcially fish, and with a little sour cream on top.

Pinto beans, black beans and chickpeas are simmered with sweetcorn, tomatoes and savoury spices. This recipe calls for dried beans, which will need to soak overnight. You could use tinned beans for a shortcut, if you prefer.
