I learned how to make this while visiting my husband's family in Syria. It can be a healthy, fast and easy vegan main for lunch or dinner that is surprisingly filling when eaten with pitta bread. It is also a flavourful side dish.

If you only have one recipe for this wonderful dip, this is it. Everything goes into the food processor - chickpeas, tahini, lemon juice, garlic, parsley and spring onion. Vary the flavour by adding a few chopped mint leaves, a little fresh ginger or dried chillies.

Bulghur wheat makes a tasty base for a fast salad. Here it is combined with herbs, olives, some al dente vegetables and crumbly feta cheese, all tossed in a spicy dressing. Great with iceberg lettuce and chunks of sesame-seed bread. Delicious!

This tabbouleh recipe is different. Instead of using bulgur like traditional tabbouleh, this recipe uses quinoa. It is a grain that is available at health shops. It looks and tastes better than bulgur. My husband and I both love this and neither of us is vegetarian. It's a great meal for a hot summer day. The longer it sits the better it tastes.
