I had this in a restaurant and came up with a great recipe to mimic it. This soup is lemony and full of great dill flavours. It makes a popular first course and is a crowd pleaser for all ages.

I learned how to make this while visiting my husband's family in Syria. It can be a healthy, fast and easy vegan main for lunch or dinner that is surprisingly filling when eaten with pitta bread. It is also a flavourful side dish.

Bulghur wheat makes a tasty base for a fast salad. Here it is combined with herbs, olives, some al dente vegetables and crumbly feta cheese, all tossed in a spicy dressing. Great with iceberg lettuce and chunks of sesame-seed bread. Delicious!

This is a deliciously healthy and filling Middle Eastern salad. The lentils are cooked with lemon and spices, then dressed while warm. Vegetables add colour, and dried apricots, goat's cheese and sunflower seeds complete the feast.

This is a traditional arabic recipe, passed down from my Palestinian grandmother, to my mother, and then to me. I always loved this as a kid, and being a vegetarian dish, was something i was keen to do as my mother always said it was so simple and tasty. Its also very cheap to make, and really nutritious. The secret is not to skimp on the onion, and to let the onion cook slowly for a long time, till almost brown, but still soft.

Mixed peppers and broccoli florets add colour, and the salad is finished with dried apricots, goat's cheese and toasted sunflower seeds. Serve with toasted pitta bread.

Middle Eastern spices flavour this low-fat vegetarian casserole, which is full of vegetables and other fibre-rich ingredients. It is a great recipe for a cook-ahead meal as the flavours mature and improve if the casserole is chilled overnight, then thoroughly reheated for serving. Try it with couscous.

Kefta are Lamb meatballs, flavoured with onions, herbs and spices. This is a North African dish and is a good one to try if you have friends round. You can serve the dish in the middle of the table and let everyone dig in.
