This is a Québécois pork spread with a similar taste to pâté but not as smooth. This is best appreciated spread on wholegrain toast with some onion jam.

Delicious textured balls, easy and cheap to make they are great for kids as a quick summer dinner served with a baked potato, crunchy fresh salad and cheese sauce.

Very quick and incredibly tasty dish that can be made hotter by adding more cayenne pepper or milder by leaving it out. We like ours served with rice, but works well with new potatoes, too.

Port-soaked apricots with smoked bacon

We found this a lovely alternative to the sausage option and the port makes it really special! It is best to marinate the apricots in the port over night for the best flavour. Can be prepared up to two days in advance and chilled once apricots are rolled in bacon. We also served just the apricots in port at the table for our vegetarian friends.
