This is my mother's recipe for Swedish gingerbread. We like the cookies very gingery, chewy, and warm. They are a great festive treat to have with a glass of cold milk or a cup of tea. This recipe can also be used to make puffier and more substantial gingerbread men. I can't think of anything better to smell baking on a cold evening.

Make a circle with the dough and cut only part way through twisting each piece partially on its side to make a beautiful bread for Christmas morning.

This is a traditional Swedish rye bread. Be sure that the seeds you use for this bread are fresh. You may substitute wholemeal flour for the rye flour. I prefer wholemeal. Gluten flour, a very important ingredient in this recipe, may be found in most health food shops.
