This is a cold, garlicky Spanish soup - perfect in summer, especially if you can't make it to Spain. Fresh almonds, just out of their shells, are traditionally used. This version calls for ground almonds, as fresh almonds are hard to come by here.

This is a fairly quick and easy recipe for empanadas. A friend recently gave it to me, and my whole family loved them!!! Just about any kind of fruit, including melon, is fine. Or make the meat filling by using your favourite type of meat. Make one of the fillings or double the pastry and make both!

I found a good sangria recipe and headed to the off license to purchase the alcohol. In the queue, ahead of me, was a man who said he has been a bartender for 20 years now, and that my recipe needed a few touch-ups if I wanted to make it like the Pros. Made with whole oranges – simmered until very tender and then finely chopped – and ground almonds, this classic Spanish cake has a moist, light texture and a wonderful fresh flavour.

WONDERFUL!!! A wonderful punch made with white wine, mango and orange slices. Peach schnapps, cognac and ginger ale round out this summer party drink.
