This fresh chorizo is delicious, easy to make and way better than shop bought. I keep some in the freezer at all times for a quick and easy breakfast with scrambled eggs and cheese. Enjoy!

A Spanish-style bean soup that's packed with flavour. Andouille is a spicy, heavily smoked pork sausage that is often associated with Cajun cooking. If you can't find Andouille, try fresh chorizo or a spicy Italian sausage.

Delicious and warming, with plenty of vegetables. A perfect autumn dinner.

Serve this delectable dish with a fresh, warm loaf of crusty bread for mopping up all the delicious sauce. Use Spanish chorizo if you can't find the Portuguese chouriço.

An extremely easy take on a sausage and bean stew with a rich smokey flavour. If you prefer, you could use a can of chopped tomatoes and a can of mixed beans in water instead of the baked beans but I actually find the baked beans are tastier, not to mention quicker!

Savoury and spicy chorizo made with pork, garlic, vinegar and dried chillies. This is a cheat's chorizo, as there's no need for casings. I just think everything tastes better when it's homemade - try it and see!

Tortilla, Spain's most famous tapa, is made from the simplest of ingredients – eggs, onions and potatoes – cooked like a flat omelette and served warm or cold, cut into wedges. All kinds of extra ingredients can be added, such as the courgette and bacon used here, or asparagus, peas and mushrooms.

Simple preparation in this easy-to-make pork dish. Rub a boneless pork roast with chopped garlic and a dash of salt, pan-sear in olive oil, and then braise in white wine and stock.

Colourful and packed with flavours, this thick, flat omelette, called a tortilla in Spanish, tastes good served at any temperature. The classic recipe contains only potatoes, onions and eggs, but this version has extra vegetables and lean ham added. Serve with a green salad.

This is my version of spicy spanish chickpea and chorizo stew with added vegetables for an even healthier version. The veg I use can be substituted with other veg that you have in the house, anything that needs using up really, as long as it has the tinned tomatoes then the rest is really whatever you want it to be. This is a chunky stew and will work as a lunch or dinner, great any time of the year. This stew will last 2 days and as with all stews is even nicer on the 2nd day.
